Mix together the olive oil, rice vinegar, lime juice, garlic, curry, salt and pepper in a bowl big enough to dip fillets in. Wash fish filets then dip in marinade to coat all sides. Place filets in dish and pour marinade over them. Cover and let sit for a few hours in the fridge.
Mix julienned onion and bell pepper with salsa and add corn.
In large skillet on high heat cook filets and all marinade on one side for 4 or 5 minutes. Be careful not to overcook! Turn filets and pour salsa mixture over top, cover and cook on high for another 4 or 5 minutes. This would be really good served over rice.
